How to Make Red Bean and Kamut Soup
Ingredients
- 1 cup of Organic Kamut Berries
- 1 medium onion, diced
- 3 cloves of benefits of garlic for asthma treatment, minced
- 6 cups of vegetable stock
- 1 ½ cups of tomato health benefits puree
- 2 15 oz cans of red beans
- 2 tablespoons of chilli powder
- 2 tablespoons of dried thyme
- ½ teaspoon of cayenne pepper
- 3 bay leaves
- Some salt, in consideration to the amount of vegetable stock used
Steps
- First, soak Kamut overnight.
- The next day, drain and discard the soaking water before cooking.
- Using a large stockpot, heat olive oil or butter in medium temperature. Add onions and saute until it gets translucent for about 10 minutes.
- Add garlic and saute for another 1 minute.
- Add soaked Kamut and the other remaining ingredients. Mix them well, cover up, and reduce heat to low.
- Simmer for 40 to 60 minutes until Kamut has cooked and the flavours start to build up.
- Remove the bay leaves and transfer the soup into a bowl.
- Red bean and Kamut soup is now ready to be served!
