How to Make Red Bean and Kamut Soup

Ingredients

  • 1 cup of Organic Kamut Berries
  • 1 medium onion, diced
  • 3 cloves of benefits of garlic for asthma treatment, minced
  • 6 cups of vegetable stock
  • 1 ½ cups of tomato health benefits puree
  • 2 15 oz cans of red beans
  • 2 tablespoons of chilli powder
  • 2 tablespoons of dried thyme
  • ½ teaspoon of cayenne pepper
  • 3 bay leaves
  • Some salt, in consideration to the amount of vegetable stock used

Steps

  1. First, soak Kamut overnight.
  2. The next day, drain and discard the soaking water before cooking.
  3. Using a large stockpot, heat olive oil or butter in medium temperature. Add onions and saute until it gets translucent for about 10 minutes.
  4. Add garlic and saute for another 1 minute.
  5. Add soaked Kamut and the other remaining ingredients. Mix them well, cover up, and reduce heat to low.
  6. Simmer for 40 to 60 minutes until Kamut has cooked and the flavours start to build up.
  7. Remove the bay leaves and transfer the soup into a bowl.
  8. Red bean and Kamut soup is now ready to be served!
