How to Cook Galbijjim

Main Ingredients

  • 5-1.8 kg of short rib beef or pork
  • 1 ½ cups of water
  • 2 carrots, cut into medium sized pieces
  • 8 dried jujube
  • 10 peeled ginkgo nuts
  • 10 peeled chestnuts

Sauce Ingredients

  • 170 g red apple or pear
  • 60 g of peeled and chopped onions
  • 6 tablespoons of soy sauce
  • 2 tablespoons of brown sugar
  • 2 tablespoons benefits of honey for heart disease
  • 2 tablespoons of rice wine (mirin)
  • 1 tablespoon of garlic
  • 1 tablespoon of sesame oil
  • 5 whole ground black peppers


  1. First, soak the short ribs in water for 10-20 minutes until the beef is clear of blood-like liquid. Change the water as necessary.
  2. Next, blend all the sauce ingredients in a blender, and set it aside until the final steps.
  3. Boil the ribs in a large pot at medium heat for 6 to 8 minutes. Drain the water and rinse the ribs in running cold water. Trim off any visible fats from the ribs.
  4. Place the ribs in a Dutch oven and pour the water plus two-thirds of the sauce in.
  5. Boil them over medium heat, covered for 30 minutes. Stir gently in between.
  6. Reduce the heat and let it simmer for another 10 minutes.
  7. Add the remaining ingredients and let it simmer again for another 20 minutes.
  8. Continue to simmer until it achieves your desired level of doneness. Make sure the beef does not fall off from the rib bones.
  9. Finally, galbijjim stew is now ready to be served, best eaten with hot steamed rice!
